Flaked Baked Salmon with Mashed Sweet Potato

Ingredients
  

  • 150g (5.5oz) salmon fillet, skinless
  • 200g (7oz) sweet potato, peeled and cubed
  • 15g (1 tbsp) unsalted butter
  • 30ml (2 tbsp) whole milk
  • 1 tsp olive oil
  • Squeeze of lemon juice

Method
 

  1. Preheat the oven to 190C (375F / gas mark 5).
  2. Drizzle the salmon with olive oil and lemon juice, then bake for 15-18 minutes until it flakes easily with a fork.
  3. Meanwhile, boil the sweet potato cubes for 15 minutes until completely tender, then drain.
  4. Mash the sweet potato with the butter and milk until smooth and soft.
  5. Flake the baked salmon into small, soft pieces with a fork, removing any bones.
  6. Serve the flaked salmon alongside the mashed sweet potato.
