Moist Meatballs in Tomato Sauce

Ingredients
  

  • 300g (10.5oz) lean turkey or beef mince (5% fat)
  • 1 egg
  • 30g (1/3 cup) breadcrumbs, softened in 30ml (2 tbsp) milk
  • 1 tsp dried oregano
  • 400g (14oz) tinned chopped tomatoes
  • 1 tsp olive oil

Method
 

  1. Preheat the oven to 190C (375F / gas mark 5).
  2. Mix the mince, egg, soaked breadcrumbs and oregano together in a bowl until well combined.
  3. Roll into small meatballs, about the size of a walnut, and place on a lined baking tray.
  4. Bake for 15 minutes until cooked through.
  5. Meanwhile, warm the chopped tomatoes with the olive oil in a saucepan over low heat for 10 minutes to make a soft sauce.
  6. Add the cooked meatballs to the sauce and simmer gently for 5 minutes until well coated and moist.

Keep the meatballs small. Bite-sized is best, so you're not tempted to cut down a big one and end up with a chunk that's too much in one go.
