Baked Salmon with Quinoa & Greens

Ingredients
  

  • 250g (9oz) salmon fillet, skin on
  • 90g (1/2 cup) quinoa, uncooked (cook to approx. 180g)
  • 180ml (3/4 cup) water or stock
  • 100g (3.5oz) baby spinach
  • 1 tsp olive oil
  • Squeeze of lemon juice

Method
 

  1. Preheat the oven to 200C (400F / gas mark 6).
  2. Rinse the quinoa and cook in water or stock according to packet instructions, about 15 minutes, until fluffy.
  3. Meanwhile, season the salmon and bake for 15-18 minutes until cooked through and flaking easily.
  4. Wilt the spinach in a dry pan for 2 minutes.
  5. Fluff the cooked quinoa with a fork and stir through the olive oil and wilted spinach.
  6. Serve the salmon on top of the quinoa and spinach with a squeeze of lemon.
