Stuffed Bell Peppers with Lean Mince

Ingredients
  

  • 2 large bell peppers, halved and deseeded
  • 300g (10.5oz) lean beef or turkey mince (5% fat)
  • 90g (1/2 cup) cooked brown rice
  • 100g (3.5oz) tinned chopped tomatoes
  • 40g (1/3 cup) grated mozzarella
  • 1 tsp Italian herbs

Method
 

  1. Preheat the oven to 190C (375F / gas mark 5).
  2. Brown the mince in a pan until fully cooked, breaking it up as it cooks.
  3. Stir in the cooked rice, chopped tomatoes and Italian herbs, and simmer for 5 minutes.
  4. Spoon the mixture into the pepper halves, arranged in a baking dish.
  5. Top with grated mozzarella and bake for 25-30 minutes until the peppers are tender and the cheese is golden.
  6. Serve warm.
